Here is the full recipe for 12 portions:
Ingredients:
– 2 bananas;
– 2 eggs;
– 9 apples;
– 200g of sunflower seeds;
– 200g of oat bran;
– 2 tablespoons of Greek yoghurt – 60g (or other thick);
– 5 tablespoons of cinnamon – 15g (1 for apples, the rest for the cake);
– 4 tablespoons of cocoa – 15g;
– 4 tablespoons of erythritol – 40g (or other low carb sugar);
– 1 tablespoon of baking powder – 5g;
– 2 tablespoons of oil – 10g;
– a little bit of olive oil to brush the baking tin.

The baking tin I used in the video has a diameter of 26,5 cm.

1. Start with apples: peel them, cut into quarters, cut off the applecore and dice it.
2. Put all in a pan without fat, sprinkle with cinnamon, cover and stew for about 10 minutes over medium heat.
3. While stewing, stir a few times so that the apples stew evenly.
4. Meanwhile, prepare the mass: start with the bananas, peel them and cut into slices.
5. Put everything into a food processor / blender, then crack there two eggs.
6. Blend everything to a homogeneous mass and set aside.
7. Grind the sunflower seeds and set aside.
8. Put the oat bran into a large bowl (leave a little bit to sprinkle a baking tin later on).
9. Add the remaining ingredients: cocoa, cinnamon, sugar, baking powder, ground sunflower seeds, banana and egg mass, oil and Greek yoghurt.
10. Mix everything thoroughly.
11. Brush the baking tin with olive oil and sprinkle with oat bran.
12. Put the stewed apples (if you want a condensed cake, get rid of the water they released) and spread evenly.
13. Add the mass and spread to cover all apples.
14. Put in an oven preheated to 180 ° C for 20-25 minutes, until the cake is golden brown.
15. When it’s baked, take it out of the oven to cool down.
16. When it cools down, gently turn it over, preferably with something round and flat, such as a chopping board, which you put inside.
17. Open the baking tin (if it clung to the cake, cut it around), remove the bottom and cut into pieces.
