This is the best recipe for healthy cornbread! You’re gonna love it!
Preheat your oven to 350 F
Line a loaf pan with parchment paper. It’s optional, if you don’t have parchment paper, coat the loaf pan with cooking spray or shortening.
Ingredients:
2 tablespoons flaxseed meal- for a flax egg.
1 cup white whole wheat flour
1,25 cup cornmeal
.5 cup almond flour
.5 teaspoon salt
2 teaspoons baking powder
.25 teaspoon baking soda
2 tablespoons dried chives
1 tablespoon dried parsley
2 tablespoons sesame seeds for topping just before baking.
1 cup applesauce
1 cup cooked corn- rough chop
,25 cup maple syrup
1 cup plant milk
Make a flax egg by mixing the flaxseed meal with 3 tablespoons of water. Set aside for several minutes.
Stir together the following dry ingredients: wheat flour, cornmeal, almond flour, salt, baking powder, baking soda, chives, and parsley.
Stir together the corn, milk, applesauce, and flax egg.
Stir wet ingredients into the dry ingredients. Do not over stir. Just moisten the dry ingredients.
Pour into prepared loaf pan. Sprinkle with the sesame seeds. Pat into batter.
Bake in preheated 350 F oven 40 minutes or poke with a toothpick, if it comes out dry, the bread is finished baking. Cool in pan about 5-10 minutes, then cool on a wire rack. Remove parchment paper.
You can serve it hot but it could be crumbly (but delicious), We usually let it cool a bit and serve it warm. YUM!
