Pineapple and shredded carrots are the secret ingredients that make this bread ultra-moist and sweet without the excess sugar and oil. The bread is whole wheat and generously packed with wholesome ingredients like golden raisins and sunflower seeds.Eat as much as you like without the guilt. This healthy sunshine bread recipe is wonderful and you can also use zucchini or grated apple in place of carrot. This bread is brightly flavored with ginger and orange this amazing loaf is an all around mood booster.
1/3 cup oil
1 3/4 cup white whole wheat flour
1 1/2 teaspoons of baking powder
1/2 of baking soda
1 1/2 teaspoons of ground cinnamon
1 teaspoon of ground ginger Half a teaspoon of kosher salt
2 cups of peeled and shredded carrots about four medium
1/2 cup golden raisins
1/4 a cup of dry roasted unsalted sunflower seeds
Two large eggs at room temperature
1/2 cup honey
1 1/2 tsp pure vanilla extract
Zest of two medium oranges about 2 tablespoons
1/4 cup freshly squeezed orange juice
1 cup fresh or can pineapple crushed
Play say rack in the center of your oven and preheat the oven to 325°F lightly coat a 4 1/2 x 8 1/2″ loaf pan with nonstick spray and set aside. In a medium microwave safe bowl microwave a coconut oil for 30 seconds continue to microwave and 15 second burst just until melted. You can also melt the coconut oil in a medium bowl set over a sauce pan a simmering water on the stove set aside and let it. In a large bowl whisk together the flour baking powder baking soda cinnamon ginger and salt. Fold in the carrots golden raisins and sunflower seeds until evenly incorporated. To the bowl with the coconut oil add the eggs honey vanilla orange zest and orange juice. Whisk until smooth combined. Drain off as much excess liquid from the pineapple as possible and whisk it into the wet ingredients. Make it well in the center of the dry ingredients and then pour the wet ingredients into the center by hand with a spatula or wooden spoon stir gently fold in the ingredients together just until combined and the flower disappears the batter will be thick and shaggy. Scrape the batter into the prepared pan and smooth the top. Bake for 30 minutes and then loosely tent the bread with aluminum foil to keep it from turning to Brown this is the honey caramelizing in the oven. Continue baking for 35 to 45 additional minutes until a thin sharp knife inserted into the very center comes out clean. The moisture content of your carrots and pineapple will affect the baking time so check the bred several minutes early and don’t be afraid to let it bake longer if needed. Place the pan on a cooling rack and let it cool for five minutes run a knife along the edges of the bread to loosen it from the pan if needed and then gently remove the loaf from the pan and let it cool on the rack completely use a large sharp knife to cut it into thick slices and then taste the sunshine.
