Ingredients
* 4 oz. (115g) asparagus, tough bottoms removedÂ
* 4 tbsp. green pesto Â
* 2 tbsp. olive oilÂ
* 8 eggs, lightly beatenÂ
* ¼ cup (05g) grated ParmesanÂ
* 1 large burrata, room temperature (5oz./150g)Â
* basil leaves, to garnishÂ
* salt and pepper
You can add any of your favorite fillings, like mushrooms, onions or cooked potatoes, to the frittata – though I like to keep it simple with asparagus.
