It’s time for some more healthy meal-prep! These breakfast burritos are packed with flavor, protein, and all the nutrients you need to start the day. I use a medley of spices and some of my favorite plant based foods but feel free to change it up to your favorites or use whatever you have around. Subscribe for more tasty recipes!
LOADED Plant Based Breakfast Burritos
This is a bulk recipe so some ingredient measurements may vary.
Ingredients:
Tortillas – Large
1 Can Black Beans -Rinsed
Tofu Block
1 Cup Kale -Chopped
1 Whole Onion -Diced
1.5 Cups Mushrooms -Diced
1.5 Cups Yam (Sweet Potato) -Diced
1.5 Cups Zucchini -Diced
1 Whole Jalapeno -Diced and seeds removed
3 Cloves of Garlic -Minced
2 Tbsp Chili Powder
1 Tbsp Turmeric
1/2 – 1 Cup Nutritional Yeast
1 Tsp Cumin
Salt
Salsa
Vegan Cheese
Prepare Vegetables (portion or dice with pan size in mind)
Drain/dry press Tofu and crumble (remove as much water as possible)
Set pan or wok to med-high, add moderate amount of cooking oil
Add diced onions, brown while stirring occasionally
Add diced yam, stir occasionally
Add diced mushrooms and jalapeno and minced garlic
Stir and brown mixture and add diced zucchini
Add chili powder, turmeric, and salt to taste
Stir and add Nutritional Yeast and Cumin
Add in crumbled Tofu and stir
Chop and add Kale and rinsed black beans
Fry mixture of a minute or two while stirring occasionally
Done!
Take this mixture and form burritos from tortillas
(Use tin foil or wrap to help form burritos if needed)
Save aside bulk in the fridge or freeze. Can pan fry burritos for a couple minutes right after preparing mixture to eat. Enjoy!
