Za’atar flatbread recipe
Active time: 30 minutes
Inactive time: 7-9 hours
Makes 8 flatbreads
Ingredients
1 cup (120 g) almond flour
½ cup (70 g) quinoa flour
½ cup (70 g) hulled hemp seeds
½ cup (25 g) blond flax meal
1 cup (170 g) dried figs
5 oz/150 g cucumber, chopped
1 tbsp za’atar
2 tbsp onion powder
1 large garlic clove, minced
1 tbsp psyllium husk
1 tbsp chia seeds
1½ cups (355 ml) sunny soak water (soak water of oil-free semi sundried tomatoes)
Method
Add the ingredients to a food processor and mix them into a dough.
Divide the dough into two equal parts and spread evenly onto two non-stick dehydrator sheets, about ¼”/0,5 cm thick.
Create the flatbreads with your hands or a spatula.
Score the dough into four equal pieces.
Dehydrate the flatbreads at 145 ℉/63 ℃ for two hours.
Flip the flatbreads onto other dehydrator trays and carefully remove the non-stick sheets.
Dehydrate the flatbread for another 4-6 hours at 115 ℉/46 ℃ for two hours.
The za’atar flatbread should be dry and pliable.
