Green Crostini ☘️☘️
Ingredients:
1 baguette
1 Lb green peas, frozen
1 1/2 C parmesan, grated
3/4 C pistachios, roasted & salted
3/4 Oz basil, fresh, leaves only
2 garlic cloves
3 1/2 Tbsp lemon juice
1/4 C olive oil + more for drizzling on baguette
1 1/4 Oz pea shoots (optional)
8oz burrata cheese or fresh mozzarella
1 Tsp salt + more for seasoning baguette
1 Tsp black pepper + more for seasoning baguette
Directions:
1: Preheat oven to 375 degrees Fahrenheit
2: Slice baguette, drizzle with olive oil and season with salt and pepper. Bake until golden brown, about 10-15 mins and flip, allow other side to bake another 5-10 minutes.
3: Boil a pot of water, add in 2 cloves of garlic and cook for 2 minutes. Then add in frozen peas and cook for an additional 2-3 minutes. Strain them both and place them in an ice bath to stop the cooking process.
4: In a food processor add in frozen peas, pistachios, parmesan cheese, basil, lemon juice, salt* and pepper. Pulse together for 5-10 seconds. Add in 1/4 C olive oil and blend together for about 1-2 minutes until desired consistency.
5: Top your toasted baguette with the green pea spread, little pulls of burrata, and garnish with pea shoots. Enjoy!
**pistachios and parmesan cheese can vary with saltiness. I would start with 1/2 Tsp and build up to ensure it’s seasoned properly.
