carrot muffins 🥕 *I substituted MCT oil, coconut sugar, and gf flour & did not use walnuts

nourishing chicken curry dinner bowl recipe
1. bone broth rice
bring 2 cups of bone broth to a boil. add 1 cup of soaked / rinsed rice. lower heat and cook on lowest setting with lid for 15 mins. turn off heat & leave lid on for 10 mins to finish cooking
2. cook chicken in ghee:
sear for 2 mins on each side. sprinkle with curry + turmeric, turn to lowest heat setting and cover for 8 mins. turn off heat, do not remove lid, allow to finish cooking for 10 mins. remove chicken & shred.
3. add 1 can coconut milk to pan. add shredded chicken back in. sprinkle 1 TBS coconut sugar into pan add a handful chopped dates + golden raisins. add a sprinle of cardamom + ginger, + more curry powder to your liking. salt + pepper, + cilantro on top.

gf flour recipe **I’m not home right now and left my book there, so this is what I remember but not 100% accurate I’ll update when I get home 🙂
+ 6 cups white rice flour
+ 3 1/2 cups sorghum flour OR amaranth flour
+ 1/4 cup xanthan gum
+ 1 3/4 cup potato starch
+ 1 3/4 cup tapioca flour
