A 15 seconds video on how to make a healthy egg salad sandwich which uses just greek yogurt, and no mayo.
8 large hard cooked eggs
6 TBS greek style yogurt (preferably full fat)
2 tsp dijon mustard
2 tsp freshly chopped chives
c0ase salt and freshly ground pepper
lettuce leaves
8 thin slices bread
1. Peel eggs, finely chop whites and crumble the yolks into a bowl
2. Add the yogurt, mustard chives, salt and pepper. Gently stir to combine
3. Arrange salad, then lettuce, over the slices of bread. Top with remaining slices of bread, and serve
