Sheet Pan Fajitas
16 oz, Uncooked boneless skinless chicken breast, cut into strips
2 medium, Uncooked bell peppers, cut into strips
1 medium, Uncooked red onion, chopped
2 Tbsp Fajita seasoning mix The one I use
1⁄8 cup Olive oil
8 tortillas (I use Pueblo Lindo White corn tortillas)
In a large bowl, add chicken, onions, peppers, olive oil and fajita seasoning and mix until well coated. Pour onto foil lined cookie sheet and spread out evenly. Bake at 425 for about 20 minutes or until chicken reaches an internal temperature of 165F. The last few minutes of cook time, let tortillas wrapped in foil warm in the oven. Spread 1/4 of the fajita mixture on 2 tortillas. I top mine with salsa, ff greek yogurt, cilantro, avocado. I also squeeze fresh lime juice on top.

Pigs in a blanket:
1 1/8 cup self rising flour, divided
8 turkey hot dogs
8 slices of Velveta cheese slices
1 egg, beaten
everything bagel seasoning
Mix 1 cup flour and yogurt together until they form a dough. Knead on a floured surface for 2-5 minutes. Cut dough into 8 equal pieces, roll out each piece into a triangular shape. Place cheese slice and hot dog on widest part of dough and roll up. Brush beaten egg on dough and sprinkle with the bagel seasoning. Cook in air fryer at 400 for about 4 minutes. To bake them in the oven, place on a prepared cookie sheet, bake at 350 for about 20 minutes.

Cheesy Chicken and Broccoli Quinoa:
16 oz fresh or frozen broccoli, steamed
1 cup dry quinoa, cooked
8 oz diced, cooked chicken breast
1 1/2 cup shredded low fat cheddar cheese
2 cups almond or skim milk
1/3 cup greek yogurt
2 Tbsp flour
3 Tbsp light margarine or butter spread (I like Brummel and Brown).
salt and pepper to taste
Steam broccoli and set aside. Melt butter spread in large pan on medium heat. Once melted, whisk in flour and cook for about a minute. Add milk and whisk well, continuing to cook on medium heat until it starts to thicken. Once thickened, add in quinoa, chicken and broccoli, stir well. Add in greek yogurt and about 1 cup of the cheese. Add pepper and salt to taste. Pour in a prepared casserole dish, top with remaining cheese and bake at 350 for about 20 minutes.
