This week I’m sharing 3 healthy budget friendly recipes to make with OATS that are not regular cooked oatmeal. An oil free cinnamon brown sugar granola, a homemade granola bar recipe with option for low calorie and low fat granola bars (THESE ARE STILL SOOO GOOD!), and oat banana pancakes! Oats are so cheap and healthy, if you are on a low budget and trying to eat healthy I definitely recommend adding them into your diet!

RECIPES:
CINNAMON BROWN SUGAR GRANOLA
5 cups rolled/old fashioned oats
3 TB ground flax seed
½ c seeds or chopped nuts (I used sunflower and pumpkin seeds)
2 tsp cinnamon
½ c applesauce
¼ c brown sugar (can use any sweetener- maple syrup, agave or honey if not vegan)
🔹Mix together oats, ground flax, cinnamon, brown sugar, and seeds
🔹Add applesauce and mix well
🔹Spread evenly on silpat or parchment paper lined pan
🔹Bake at 350 for 15 min, stir, bake another 10-15 minutes, check frequently in last few minutes so it doesn’t burn
NO BAKE GRANOLA BARS (Adapted from
1 cup PB or reconstituted PB powder for low calorie (I used PBfit2, its 2TB to 1.5TB of water)
⅓ cup applesauce
⅓ cup maple syrup
1 tsp vanilla
½ tsp salt
1 tsp cinnamon
2.5 cups oats (use 3 cups of oats if using PB powder, it’s thinner)
3 TB ground flax (or other seed of choice)
⅓ cup raisins or chocolate chips (optional)
🔹If using PB powder, reconstitute according to package instructions
🔹Stir together PB, applesauce, maple syrup, vanilla
🔹Add salt and cinnamon, stir well
🔹Add oats and flax seed (or seed of choice) and stir
🔹Add raisins or chocolate chips
🔹Place in 8×8 baking dish lined with parchment paper, can place second piece of parchment paper on top and press down with a cup or dish to flatten
🔹Refrigerate for 1 hour before cutting, then store in fridge
OAT BANANA PANCAKES
2 cups oats ground into flour
2 TB ground flax seed
4 tsp baking powder
2 tsp cinnamon
1 tsp salt
2 cups vanilla soy milk (or any non-dairy milk, can add 2 tsp vanilla if not flavored)
¼ applesauce
¼ maple syrup
2 mashed bananas
🔹Mix all ingredients up in a bowl
🔹Heat pan to medium and cook until browned
