Low fat oatmeal pancakes, gluten free and starch solution compliant is what I will be sharing with you today. These hearty pancakes are so easy and will fill you up and leave you full and satisfied without filling you out. This recipe is low fat so these pancakes are great for weight loss. Full recipe below.
LOW FAT OATMEAL PANCAKES-GLUTEN FREE
1 cup rolled oats ( I used gluten free)
1 to 1 1/4 cups water
1 very ripe banana
1/4 cup frozen riced cauliflower thawed out a bit
2/3 cup oat flour
2 tsp baking powder
1 tsp cinnamon
1 tsp vanilla (not shown in video)
1/2 tsp salt
1 flax egg ( 1 T ground flax seed mixed with 3 T water )
Instructions
In a bowl mix together the oats and water and stir well , set aside for 10 minutes. In a small bowl mix together the flax and water stir well and set aside with the oats
In a large bowl peel and mash the banana well, add the oats and stir well, next add the flax egg and stir. Then you can add the rest of the ingredients and stir well. If you want a thinner batter add a bit more water.
In a preheated non stick skillet or griddle pour batter using a 1/4 cup measuring cup. Cook until the edges get a bit dry and starting turning golden. Flip and the cook a couple minute on the other side. Top with fruit and maple syrup. Pancakes will stay up to 5 days in the fridge or 2 months in the freezer in an airtight container.
