Lamb and Lentil Rice
Ingredients:-
1. Lamb Curry
1 lb or more lamb small pieces (boneless, minced or with bone)
1 medium onion thinly sliced
2 cloves garlic chopped
1-2 green chilies
1 tsp salt
1/4 tsp black pepper
1/4 tsp red chili powder
1 tsp ground cumin
1/2 tsp ground green cardamom
1/2 cup yogurt

2. Lentil
1/2 cup or more whole masoor pre soaked (for an hour)and drained
Stock (any or water, salted chicken stock was used in recipe) 2 cups

3. Rice Pilaf
2 cups Basmati rice soaked in hot water for 20-30 min and drained
3.5 cups stock (as above)
1/4 tsp salt (as stock was salted)
2 tbsp butter
Yellow food color/ saffron

4. Toppings
5 dates chopped (1 cup)
1/2 cup golden raisins
1-2 cups fresh pomegranates seeds

Persian Salad
Ingredients:-
1 cucumber chopped
1 tomato chopped
1/2 red/white medium onion chopped
1 cup fresh mint leaves chopped
Juice of half lemon/ lime (2-3 tbsp)
1 tbsp olive oil
Salt to taste
Black pepper to taste
