RICOTTA CHEESE DESSERT RECIPE

Ingredients:
1.5 cups ricotta cheese (400g)
2 tbsp honey
1/2 cup heavy cream (120ml)
3 small peaches (or 2 large)
1/2 tbsp maple syrup
1/2 tbsp butter

NUTRITIONAL INFO (per serving):
233 calories, fat 12.2g, carb 22.4g, protein 10.2g

Preparation:

For ricotta mousse: in a bowl add the cream cheese and honey, and blend with a hand blender until smooth and creamy.

In another bowl, whip the cream until stiff peaks are formed.

Using a rubber spatula, fold the whipped cream into the ricotta mixture until combined. Let it chill in the fridge for at least one hour.

Halve, pit and slice the peaches.

In a frying pan, heat some butter over a medium heat. Place the peaches into the pan, drizzle with maple syrup and cook for 5-10 minutes, until the peaches are soft and caramelized on both sides.

Spoon the ricotta mousse into the glass or cup, and top with cooled peaches.

Serve the dessert straight away or chill for a firmer texture.
