This Easy, Healthy Shepherd’s Pie/Cottage Pie is perfect to save use money and time. I’ve modified to make this recipe to be healthier with less calories, more vegetables, more protein but less fat. It is also made faster, with less ingredients, and of course cheaper than any recipes out there. Yet, it is still absolutely delicious.

Cheap & Healthy Shepherd’s Pie Dinner
Total time: 1 hr

Equipment: need 9×9 or 7×11 baking dish
Ingredients:
+ For the mashed potatoes:
• 1 ½ pound (680g) russet potatoes
• 4 TBS (57g) butter
• ¾ cup (178 mL) 2% milk/half and half
• 1 tsp (1.2g) garlic powder
• Salt & pepper to taste
+ For the meat & veggies filling:
• 1 pound (454g) 20% fat ground beef/lamb
• 1 large (10 oz (280g)) onion
• 3-4 cloves of garlic
• 2 tsp (2g) basil
• 1 TBS (3.5g) Rosemary
• 1 TBS (3g) thyme
• 2 – 4 TBS (15g – 31g) flour
• 1 ½ cup (355 mL) beef broth
• 1 TBS (15 mL) Worcestershire sauce
• ½ tsp (3g) salt & ½ tsp (1.2g) pepper or to taste
• 2 cups frozen vegetables (corn, peas, carrots, green bean mix)
Instruction:
1. Cook potatoes in salted water
2. Cook, stir & break ground beef over medium-high heat
3. Dice onion then add into the pan. Stir
4. Mince garlic, add into the pan, stir until start to brown.
5. Preheat oven to 450 F (232 C)
6. Add flour (more to be thicker), stir until not visible
7. Add beef broth, Worcestershire sauce, salt & pepper, stir until thicken (about 1 min).
8. Add frozen vegetables, stir to mix.
9. Transfer into baking dish
10. Drain off liquid from the potatoes pot.
11. Mash, add milk, mash. Add garlic powder, salt, pepper to taste
12. Mash until creamy. Spread on top of the meat mixture
13. Bake for 30 minutes
14. Sprinkle some chopped chives for garnishing, optional
