This vegan Falafel Sandwich recipe is healthy and delicious! I can’t wait for you to tell me what you think! In my effort to adopt a more plant-based diet, this recipe has fast become one of my favorites!
INGREDIENTS:
1 1/2 cans garbanzo beans
(save the other 1/2 can for a yummy salad – recipe to come)
2 cloves garlic
1 small red onion
1/2 cup flat leaf chopped parsley
3/4 cup oat flour
1 tbsp cumin
1 tbsp dried coriander
3 tbsp tahini
1 tsp salt
1 tsp black pepper
juice from half a lemon
DIRECTIONS:
*Pulse all ingredients in a food processor until pasty in texture, scraping down the sides as needed.
*Divide the mixture into 4 and form 4 falafel patties.
*Pan fry in 2 tbsp olive oil until crispy, about 5-7 minutes per side.
*Cut each patty in half and place in pita bread.
*Add your favorite garnishes (lettuce, tomato, cucumber, red onion)
*Top with generous dollops of vegan tzatziki sauce!
