Another easy, cheap and healthy dinner recipe. This vodka rigatoni pasta dinner is delicious, perfect for everybody includes vegetarians. Low calories, high protein with superfood broccoli, easy to make in 25 minutes for less than $2 per serving. Great dish to make for a single person or a large family. if you’re missing some meat, simply add some in at time you add broccoli. Thiny slices of chicken or some shrimp would be fabulous.

Cheap & Healthy Vodka Rigatoni
Total time: 25 minutes

Ingredients:
• 12 oz (340g) Rigatoni pasta, 1 TBS salt for boiling water
• 1 cup (100g) walnuts/pecan
• Parsley, for garnishing – optional
• 1 pound (453g) broccoli
• 3 TBS (45 mL) Olive oil
• 1 large yellow onion
• 3-4 cloves garlic
• ½ cup (135g) tomato paste
• ¼ cup (60 mL) vodka
• ½ cup (120 mL) milk
• ¼ cup (60 mL) heavy cream
• ¼ – ½ tsp Kosher salt or to taste
• 2 tsp (2g) basil
• 1/8 tsp (0.3g) pepper
• Pinch of red pepper flake, for a kick – optional
• ½ cup (45g) Parmesan cheese
Instructions:
1. Cook pasta in salted (1 TBS) boiling water according to package instruction. Meanwhile:
2. Chop walnuts, toast on medium heat with 1 tsp Olive oil until lightly brown, stir occasionally
3. Finely chop parsley for garnishing if using
4. Cut broccoli into smaller heads
5. Add 3 TBS oil in the pan over medium-high heat
6. Dice onion, add into the pan. Stir occasionally
7. Mince garlic, add into the pan, stir occasionally until turns brown
8. Add tomato paste, stir for 10 seconds
9. Add vodka, stir to deglaze.
10. Add milk, cream, 1 cup pasta liquid. Stir until tomato paste dissolved.
11. Add salt, basil, pepper, pepper flakes (if using). Stir to mix
12. Add broccoli. Stir to mix with the sauce.
13. Add 1 cup pasta liquid. Stir to mix. Reduce heat to medium. Cook for 2 minutes. Stir occasionally
14. Season with salt and pepper to taste.
15. Add cooked pasta in the pan. Stir to mix with the sauce.
16. Add Parmesan cheese. Stir until dissolved.
17. Garnish with chopped parsley, some grated Parmesan cheese and crunchy nuts. Serve warm.
