Ingredients:
• 2 TBS (30 mL) Olive oil
• ½ pound (226g) ground beef, 15%/20%fat
• 1 large onion
• 1 pound (553g) medium/large shrimp, easy peel recommended
• 7 oz (200g) andouille sausage link
• 1 large green pepper
• 2 large celery stalks
• 10 oz (285g) fresh/chopped frozen okra
• 3 cloves garlic
• ¼ cup (31g) flour
• 1 ½ – 3 cups (355 – 710 mL) beef stock, thin like soup or thick like gravy is up to you
• 2 cans (29 oz (822g)) diced tomatoes
• 3 bay leaves
• 1 TBS (15g) Cajun seasoning
• 1 tsp (1g) thyme
• ¼ tsp salt
• ¼ tsp (0.6g) pepper
• 2 tsp (8.4g) sugar
• 1 ½ TBS (7.3g) gumbo file
• 1 TBS (15 mL) Worcestershire sauce
• 1 TBS (15 mL) Louisiana hot sauce
• 3 cups (567g) of uncooked long-grain rice

Instructions:
1. Large pan on medium-high heat
2. Add Olive oil, ground beef. Stir and break and beef occasionally
3. Dice onion, add into the pan
4. Add warm water to thaw the shrimps if needed
5. Slice sausage, pepper, celery, and okra; add into the pan; stir up
6. Mince garlic, add into the pan; stir occasionally until sausage and other ingredients have some brown. Reduce heat if browning too fast.
7. In the meantime, peel the shrimps.
8. Once browned, add flour, stir until flour not visible
9. Add beef stock, diced tomatoes, stir up
10. Add bay leaves, and the rest of ingredients, except for the rice
11. Stir to mix; reduce heat to low; cover with a lid and simmer for 45 minutes
12. In the meantime, cook the rice.
13. After 45 minutes, stir one last time; taste and adjust seasoning if needed; remove from heat
14. Serve warm on top of rice; sprinkle with some chopped green onion for garnishing if desired.
