It’s almost the 4th of July and that means get-togethers and grilling out! For this busy holiday weekend, I have a delicious and easy recipe for you: vanilla pudding layered fruit and shortbread cookie cups.

Angie’s Shortbread cookie layered cups
Serves 4
1 cup – 5F/28C/2P
150 calories
Ingredients:
1 small box of sugar free vanilla pudding (split into 4 servings)
1.25 cups of unsweetened almond milk
100g Sliced Strawberries (split into 4 servings)
135g sliced banana (split into 4 servings)
100g blueberries (split into 4 servings)
4 Shortbread cookies (split into 4 servings)
Directions:
1. Mix almond milk and pudding together until it makes a pudding consistency (add a tablespoon at a time to get the desired consistency) Let it sit up in the fridge for 5:00
2. Layer cups with 1/2 the pudding serving, 1/2 the fruit and 1/2 of the crumbled cookie. Repeat for one more layer and done!
3. Enjoy!
