Easy creamy chicken and mushrooms Marsala pasta, delicious pasta for less than 700 calories each big plate. Made in 25 minutes for an affordable dinner either a date night or just a family meal, this is the perfect dish. Just as usual, another healthy dish that includes balanced nutrients of protein, fat, carbs and vegetables.

Easy Chicken & Mushroom Marsala Penne

Ingredients:
• 8 oz – 10 oz (226g- 283g) penne pasta
• 4 TBS (57g) unsalted butter
• 12 oz – 16 oz (340g – 454g) mushroom
• 1 medium/large onion
• 3 cloves of garlic
• 1 large boneless skinless chicken breast
• ¼ tsp (1.5g) Kosher salt
• ¼ tsp (0.6g) pepper
• ½ tsp (0.5g) thyme
• ½ cup (118 mL) Marsala wine
• 1 cup (237 mL) chicken broth
• ½ cup (118 mL) heavy cream
• ½ cup (45g) grated Parmesan cheese
Instructions:
1. Bring a large pot of water to boil, add ½ TBS (9g) Kosher salt, cook pasta according to package’s instruction.
2. Add butter in a large pan over medium heat
3. Wash, chop mushroom into thin slices; add into the pan; stir up
4. Dice the onion; mince garlic; add into the pan; stir up
5. Stir occasionally until mushroom and garlic are brown.
6. Cut chicken into thin slices; add into the pan once mushroom is brown
7. Add salt, pepper, thyme; stir to mix.
8. Add Marsala wine, stir to deglaze
9. Add chicken broth, heavy cream. Stir, bring to a boil.
10. Reduce heat to simmer until slightly thicken; taste and adjust seasoning if needed
11. Add cooked pasta, Parmesan cheese; stir until the cheese is melted
12. Remove from heat; serve warm; sprinkle with some grated Parmesan cheese and/or chopped parsley for garnishing if desired.
