Hope you enjoy this full day of warm and hearty meals as we are headed into fall! A very balanced and satisfying day full of plant based meals, eating as much as I’m hungry for!

I started the day by loading hemp seeds onto buttered sourdough toast and paired that with a plum and espresso. This toast is so satisfying to me, it’s become a quick staple breakfast. From our dinner the night before ( I cooked up more seasoned potatoes with leftover spicy black beans and toppings. Snacked on pistachio nuts, and had a coconut water and a vanilla pea protein drink mid-day. Finished off the day with a loaded vegan sausage wrap that turned out amazing!

Also, as an intuitive eater I rarely measure unless following a specific recipe. Most meals I make are measured by eyeballing 👀 and to my personal taste preference.

THE MENU

06:00 AM – Espresso

09:00 AM – Hemp Seed Toast
Sourdough, plant butter, hemp seeds and a plum with espresso.

02:00 PM – Potato and Bean Bites
Used left overs from the day before:
✔ Potatoes: sliced russet potatoes tossed in olive oil and your favorite taco seasoning to taste roasted in the air fryer at 400 degrees Fahrenheit, for 25-30 minute (till crispy).
✔ Spicy Black Beans: In a crock pot or dutch oven sauté a half onion chopped and 6 cloves of garlic minced in 1/4 cup+ olive oil for a few minutes, add 1 lb black beans (pre-soaked overnight), then add 2 cups vegetable broth, 6 cups water, 2 bay leaves, 1 1/2 teaspoons cumin, and red cayenne to taste. Add salt to taste (we do 3 tsp) halfway through cooking. *We used our old crock pot, so it takes 12-14 hours on high till beans are tender. Can be cooked in about 2 hours in a dutch oven on the stove top.
✔ Salsa: finely chopped tomatoes, red onion, mango, jalapeño, corn (defrosted from frozen bag), lime, and salt.
✔ Toppings: vegan mayo, hot sauce.

07:30 PM – Pistachios

08:00 PM – Vanilla Protein Drink

10:00 PM – Vegan Sausage Wrap and Fries
Hot Italian sausage (Beyond Meat) stuffed in a toasted Indian style flatbread (Trader Joe’s) along with:
✔ Topping 1: broccoli slaw (Trader Joe’s) tossed in vegan mayo, lime juice, salt, and hot sauce all to taste.
✔ Topping 2: finely chopped snap peas, green onion, yellow onion, and jalapeño.
✔ Served with: shoestring fries (from a frozen bag).
