Avgolemono Soup 🍋
10 cups of water – I use bone broth
1 whole peeled onion
4 peeled garlic cloves
2 celery stalks
1 whole carrot
1 tbs salt
2 chicken breasts or 4 tenderloins
1/2 cup rice
2 egg yolks
juice of whole lemon + zest
fresh parsley

add all veggies to broth and boil. once boiling add chicken and slightly cover with lid for 40 mins. remove all veggies including garlic from pot and add some of the broth to a blender and blend everything. shred the chicken. add everything back in and add the rice. let the rice cook about 15 mins. take off heat. temper the egg yolk, zest, and lemon juice with the soup by very slowly adding and mixing the soup with a whisk as to not “break” the egg aka scramble it. enjoy!!
