This vegan veggie lasagna with tofu is so easy to make and tasty to have ready in the fridge for dinner. I am sharing with you my latest favorite healthy dinner recipe. Stop looking for another quick and easy dinner idea and try the recipe below:
1. Cut one zucchini into thin slices. Sprinkle salt on top and let them drain while you prepare tofu mixture.
2. In a bowl crumble 2 blocks of tofu (400g). Add 15g freshly squeezed lemon juice, 1/2 tsp salt, 1/2 tsp black pepper, 3 tbsp nutritional yeast, 1 tbsp dried basil. Mash with a fork until you have sticky and almost smooth mixture or put all ingredients in e food processor.
3. Cut one red pepper into small cubes and add them into the tofu mixture.
4. Press zucchini slices with paper towel
5. In a baking dish spread a thin layer of Marinara or Tomato-Basil pasta sauce. Layer zucchini. Add tofu mixture and press it lightly. Spread a 2 tbsp of pasta sauce and continue layering zucchini, tofu, pasta sauce.
6. Bake at 200 C for 45-50min.
