Cooking healthy dinners that don’t take up more than 30 mins is a challenge all of us face, especially during this time. I’ve decided to come up with 30 easy dinner ideas that can all be done in 20 mins or less with just 1-2 pots so you can minimize clean up and eat well!
Ingredients:
• 1/4 cup rice
• 1/2 cup water + 1/2 cup pumpkin soup
• 1 tsp of kombu tsuyu (kombu soup seasoning)
• 1 egg
• Furikake
• Salmon flakes (grilled salmon that’s been fried with a bit of soy sauce, mirin, and sake)
Instructions:
• Wash your rice then place in a pot with the water and pumpkin soup mixed up. Add in the 1 tsp of kombu tsuyu.
• Cover and bring to a boil and cook for 15 mins or until rice is cooked.
• In the meantime, add just enough water to another pot so it just covers the bottom. Add in 1 egg and bring to a boil and cook for 7 mins.
• To make the salmon flakes, marinate salmon in 1 tbsp each of soy sauce, mirin, and sake.
• Broil the fish on high for 6 mins, then tear the flesh up with a fork and finish cooking on a pan until the flakes are nice and crunchy.
• To serve, peel the egg and place on top of porridge. Sprinkle on some furikake, and top with salmon flakes.
