Instant pot Guajillo chicken:
2 chicken breast, cut into 1 in pieces
7 Guajillo chilis, stemmed and seeded
1 jalapeño, cut in half. Seed or eliminate altogether if you don’t want it spicy
1 1/2 onions, 1 onion sliced thinly 1/2 onion roughly chopped
1/2 bunch of cilantro
1 1/2 c water
1/2 c light sour cream
3/4 c light mozzarella cheese
1 tbsp bouillon
1/2 tbsp Mexican oregano
1 tsp black pepper (if you want it mild heat, omit)
1 tsp salt
1 tsp smoked paprika
1 tsp cumin
3 garlic cloves, diced
5 tsp olive oil, separated

First add your Guajillo Chilis to hot water to rehydrate (about 12-15 mins). Meanwhile, mix chicken with oregano, black pepper, salt, smoked paprika, cumin, garlic, and 2 teaspoons of olive oil, let sit for about 15 mins.
Once Guajillo peppers are soft, Add them to a blender with one and a half cups of water, 1 tablespoon of bullion, jalapeño, cilantro, and 1/2 of the onion. Blend until smooth and set aside.
Turn instant pot on to sauté function and heat 1 tablespoon of oil until warm. Add chicken searing for about four minutes before stirring to see her other side. After the Chicken has cooked for a total of about seven minutes out in your onion and cook until almost tender. Add your zucchini and your 1/2 of sauce (freeze the other half for next time) and stir well. Add your top and cook manually for five minutes. Naturally release for 10 minutes. What’s the lid is off, sister in sour cream until smooth. Then, sister and cheese until melted. Served over rice.

1lb ground beef
1/2 c rice
1 tsp garlic
1/4 c cilantro
1 tsp cumin
3/4 tsp kosher salt
1/4 tsp black pepper
**1 egg optional. I forgot to add it and the meatballs turned out fine

Soup:
2 tsp oil
1 onion,chopped
1 tsp minced garlic
3 carrots, chopped
1.5 c potatoes, peeled and chopped
6 c beef broth
15 oz can diced tomatoes (I like fire roasted)
8oz tomato sauce
1/2 tsp cumin
1/2 tsp oregano
1 large zucchini, chopped
1/4 c cilantro
Salt and pepper to taste
