My current favorite is quinoa fruit salad which provides all the real nutrients of fruits that usually lose their refreshing taste with a crunch as well as nutrient value also after cooking.

Don’t keep this salad for the next day and consume it on the same day. Otherwise, all the ingredients including fruits will lose their start tasting stale.
Use fresh fruits that are available in the season. They will make your salad glow up differently.
After making, keep this salad in the fridge for at least 1 hour and then serve it. It will allow the quinoa to absorb all the fruit juices and blissful flavors of other ingredients.
Pine nuts are a seamless addition to this salad. But if you don’t find it, you can go with toasted nuts like walnuts or almonds. If you are fond of enjoying a healthy lifestyle, you can also add chia seeds or pumpkin seeds for additional nutrients.

Ingredients for salad dressing:
1. Orange juice: ½ cup
2. Lime juice: ½ cup
3. Zest of 1 orange
4. Zest of 1 lime
5. Maple syrup: 1 tablespoon
6. Ground pepper: ½ teaspoon
7. Salt: ¼ teaspoon

Instructions to make:
1. Start by washing quinoa, for this, put quinoa in a large strainer, and wash it under running water for 2-3 minutes.
2. Take a medium size pan and add water to it.
3. Add quinoa into the water and cook uncovered until the water gets evaporated.
4. Put the lid on the pan and switch off the flame. Let it as it is for 5 minutes.
5. After 5 minutes, remove the pan lid and fluff by using a fork.
6. Mix all the ingredients of salad dressing into a large size bowl, whisk them and keep it aside.
7. Transfer the cooked quinoa into another large size bowl and add all the fruits, chopped mint leaves, and toasted walnuts in it. Stir well.
8. Pour the dressing ingredients into the quinoa mixture and toss well.
9. Place the bowl into the refrigerator for 1 hour.
10. Enjoy your healthy colorful bowl.
