Ingredients:
2 eggs
1 tsp vanilla extract
1/2 cup milk
1/3 cup oil
2 cups all-purpose flour + 1tbsp extra flour
1 cup sugar
1 tbsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup blueberries
Glaze:
1/2 cup powdered sugar
1 tsp vanilla
1 tbsp milk
Method:
1. Preheat the oven to 205 C.
2. Whisk together eggs, vanilla extract, milk, and oil in a large bowl.
3. Add flour, sugar, baking powder, baking soda, and salt. Mix well.
4. Combine wet and dry ingredients together.
5. Add blueberries and 1 tablespoon of flour to a bowl and coat the berries well.
6. Add the blueberries to the batter and gently fold.
7. Pour the batter into a loaf pan.
8. Bake in preheated oven for 50 to 60 minutes or until a toothpick inserted into the centre of the loaf comes out clean.
9. Let the bread cool down completely.
10. Add powdered sugar, vanilla extract, and milk to a large bowl.
11. Whisk well and drizzle the glaze over the cooled bread.
