I found a low carb, keto friendly, healthy recipe for Cream of Mushroom Soup at www.ditchthecarbs.com that I wanted to try. I wasn’t sure how “lumpy” I could get away with it being since it was extremely difficult to get smooth and I was afraid my soup wouldn’t be thick enough since I didn’t want to add more carbs (like almond flour) to thicken it up.
