This is one of the best and healthier ways to cook fish. The foil ensures the flavours of the marinade paste beautifully intense.
Zero oil use makes it a better source of heart healthy lean protein than any fried fish.

No oil Steamed Foiled Fish
Ingredients:
Fillets of any white fish ( I have used Bhetki) cut into 4 inches rectangles
Marinade and base:

Base:
Chopped coriander leaves ( 2 bunches)
1/2 inch Chopped ginger
4 – 5 green chillies ( as per taste)
1/2 tomato chopped
1 tsp tamarind paste
1/2 of a small fresh grated coconut
1 tsp black salt
1 tsp sugar

Marinade:
Juice of 1 lemon
1 tsp of black pepper powder
salt as per taste

Prep:
Grind together all items of the base into a paste.
Rub lemon juice and black pepper powder,salt into the fish fillets.
Cut aluminium food grade foils into 10 inches rectangles.
Take each fillet and dip in the base prepared and place it in the middle of the foil, add more base if reqd, add grated coconut and red chilli over it and cover the foil.
Continue the same for all the fillets.
Take a heavy bottomed pan, fill it with water,let it come to a boil, place a strainer on top and place the foiled fillets and steam for 15 minutes. Do not overcrowd the strainer to ensure proper and uniform steaming of the fillets.

Voila !! Zero oil fish is ready
