1. What are some quick To-go meals for working women? Kristy
Whether you are working or at home caring for sick parents or a house full of children – most people are too busy to cook healthy – or so it seems.
The immediate struggle is the mindset. When I had to transform to cooking more and serving less prepared foods by a manufacturer – life took on a new level of stress.
Yet – I knew it was right.
So, I decided to have fun with it. Learn to cook one new recipe each week. I was working full time at a ministry and I was still a mom in the home.
The decision handled most of the stress.
I then started with half processed and half not processed – meaning I had to cook from scratch.
Then I searched for the ‘to-go’ meals. We are a family who loves leftovers.
Every time I cooked a soup or casserole or browned a meat such as chicken or beef, I made double and froze the rest. When I made quinoa or rice I doubled the recipes and doubled the rest.
That made a quick to go meal ready in minutes when I came home from a long day of work and the drive.
So with organic salsa or organic pasta sauce I can throw a meal together very quickly.
Add the frozen quinoa, or rice,with the sauce. Then add either the chicken or beef. Top with cooked beans – black beans are my favorite. Next add some frozen organic corn or freshly chopped peppers.
The key is having food on hand – either in the freezer, set out in the fridge the morning of, or leftovers from earlier in the week.
The other options are the power meals video I did. This is a chop, dice, prepare one day and then enjoy it every night that week – hot or cold, make a new variety every day.
2. What are a few staple food replacements to keep on hand to help stay away from junk food? – Melissa
To avoid junk food we need to make sure the diet is high in fiber, protein and fat. These three ingredients halt cravings – both sweet and salty.
We don’t want to get in the habit of replacing a good for a bad. Because as easily it was to swap a bad for a good it is easy enough to swap a good for a bad.
We are better in control when our triggers are not turned on at all and that requires eating protein with each meal and a little healthy fat. No need for a lot. Then make sure there is plenty of fiber.
3. How do I stay consistent at eating healthy when I’m always so busy? Gary
Busy has nothing to do with staying consistent. The lifestyle is what it is. Eating is a learned process. Our culture says- you are too busy – go through this drive thru.
The word to focus on is desire – what is your desire. Are you a giving in person or a learning to be strong person?
When I have a desire to eat well – the choices are evident. I prepare well ahead of time.
So to sty consistent – ask yourself – what is your desire? Then follow that desire. Keeping it as a prayer of thanksgiving for all God will provide – you will be joyfully amazed and satisfied.
