Millets are a great powerhouse of nutrition and a host of benefits preferred as substitute for rice, for many health reasons to treat obesity, diabetes and good cardiac health , it gives almost the same energy as Quinoa.
Iron is present in millets twice as much as in quinoa and as millets being a low fat grain, is suited for those concerned with obesity .
Foxtail Millets lowers the risk of diabetes. helps to lower blood glucose levels and improve insulin response in the body.
Here is an easy recipe for a declious foxtail millets pongal.
dry roast 1 cup foxtail millets
transfer to a bowl
dry roast 1/2 cup moong dal
wash them well and keep soaked for 1-2 hours
after soaking, add the dal and millets to a pressure cooker with 3 cups water
add grated ginger,pepper corns either whole or cracked,salt, asafoetida powder .
Pressure cook for 3 whistle .
after pressure subsides, open cooker, add a tempering of ghee, pepper, cumin seeds , mash the cooked dal amd millets lightly .
serve hot pongal with chutney and sambar or gothsu
