Ugly picture + a little annoying to cut /seed – but totally worth it 😉

💃🏾💃🏾Acorn squash!

How I’ve been making it:
✅Cut in half, take seeds out with spoon
✅Cut into 1/4-1/2 inch slices as shown
✅Spray/drizzle with olive or avocado oil, sea salt and other seasonings of choice (garlic, onion, cumin are all good too!)
✅Roast at 425 on parchment sheet covered baking pan for 10-15 or until carmelized/browned on one side, turn over and repeat

As it roasts it gets a natural sweetness, which is great alone or paired with any protein (ground beef, chicken, salmon)

💡Easy healthy eating tips: make this ahead of time when your cooking the night before, cleaning up the kitchen etc since it takes a little longer to cook
💡use leftovers blended into a bisque, in salads or as a hash under eggs for breakfast – so many options!
