I use 3 QUART INSTANT POT DUO MINI which is great for 2-3 people. I you are using 6 quart instant pot, just simply double the igredients and add extra cooking time.
Ingredients:
4 tbs olive oil
5 cloves of garlic
1 onion
1 cup of water (250 ml)
1 smaller eggplant
half cup of beans (if you like a thicker sauce, use 1 cup of canned beans)
half cup of tomato sauce
1 tsp oregano, 1 tsp paprika, pinch of pepper, half spoon of salt
Instructions:
Saute the garlic for 3 minutes then add onion, saute for another 3 minutes. Add herbs, spices, salt, pepper and cover it with a cup of water. Deglaze the bottom of the pot and mix the eggplant in. Cover the pot and pressure cook on High for 3 minutes. Once cooked, use the quick pressure release. When the pressure is out, add a tomato sauce, cheese and beans, saute for 6 minutes until the sauce gets thick. Serve with rice or another grains, I have used a millet.
