Today I’m going to show you how to make a delicious poppy seed cake. It contains an airy biscuit, a rich berry filling and two types of delicious curd cream. In this cake, I will show you how xanthan gum can help in healthy recipes. And, of course, I will show possible replacements if you don’t have one yet.
This low-calorie cake is a great meal for people who are choosing a healthy food, but like to eat something tasty!

Sweetener: 1 gram of my sweetener is equivalent to 10 grams of sugar.

Cake Ingredients:
Eggs (large) 5 pcs
Salt 1/3 tsp
Xanthan gum 0.5 g (1/2 scoop 1 ml) (can be replaced with 80g erythritol/natural sugar free syrup)
Sweetener 12 g
Vegetable oil 10 g
Boiling water 20 g
Natural vanilla extract 1 tsp
Spelled flour (oatmeal/wheat) 90 g
Baking powder 5 g
Poppy 40 g

Ingredients for the filling (200 g for the filling, 100 g for the curd and berry cream):
Berries (I have blackcurrant) 300 g
Sweetener 13 g
Xanthan gum 5 g
(either 16 grams of corn starch – combine with a blender and boil; or 30 grams of powdered chia seeds)

Curd 350 g
Ricotta 200 g
Natural sugar-free syrup 20 g (can be replaced with yogurt)
Sweetener 10 g
Natural vanilla extract 1 tsp
