This homemade zucchini banana nut bread is a healthy alternative to a regular zucchini bread. We are not adding regular sugar or butter, but it is flavorful and delicious, moist, and full of texture and amazing goodness, and of course, it is healthy for you.

Abbey’s Zucchini Banana Nut Bread Recipe
Ingredients:
1 small zucchini, grated (about 1 cup)
1 small over-riped banana, mashed (about 1/3 cup)
¼ teaspoon salt
¼ cup light olive oil
¼ cup almond milk
1 teaspoon vanilla
2 large eggs
1-1/2 cups flour
1 teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon ground cinnamon (You may omit if you don’t like cinnamon)
¾ cup honey + 2 tablespoons for topping (You may adjust this to your liking)
½ cup walnuts, toasted
¼ cup dried cranberries
¼ cup sliced almonds
A serving of love

Directions:

Preheat the oven to 350 degrees and place rack in center of oven. Line the bottom of a loaf pan with parchment paper to avoid sticking. If the parchment paper is not available, spray the loaf pan with a nonstick olive oil spray.

Toast the walnuts for about 6 minutes on a stove, stirring constantly, or until lightly browned and fragrant. If in a hurry, toast the walnuts in the microwave for 30 seconds, stir, then microwave for another 30 seconds.

In a large bowl, grate the zucchini. Mash the banana with a fork. Add the salt, olive oil, almond milk, vanilla, eggs, and honey. Whisk all these ingredients for about 2 – 3 minutes to incorporate air or until well blended. Add the flour, baking soda, baking powder, and cinnamon using a sifter. Mix just until incorporated and no traces of flour. Do not over-mix. Fold in the walnuts and cranberries very gently. Top with sliced almonds, then honey.

Bake until the bread is risen, about 54-60 minutes, and toothpick inserted into the center comes out clean. Place on a wire rack to cool for about 20 minutes and then remove the bread from the pan.

Makes 12 slices.
