Garlic Shrimp Stir Fry | Meal Prep Hub

Ingredients
• 1/4 cup low sodium soy sauce
• 1 tbsp garlic, minced
• 1/8 cup brown sugar
• 1 tsp sesame oil
• 1 tsp cornstarch
• 2 cups shrimp, deveined and peeled, fresh or frozen
• 500g stir-fry vegetable mixture, fresh or frozen
• 1 cup fresh or frozen asparagus

Instructions
• Prepare vegetables and shrimp as required. In a bowl, combine soy sauce, garlic, brown sugar and sesame oil whisking until well combined. Add cornstarch and whisk until well combined. Set aside.
• In a skillet, heat pan on medium high heat. Add shrimp until shrimp is pink or thaws, about 3 to 4 minutes. Add vegetables until cooked through or thaws, about 3 to 4 minutes. Pour garlic sauce over mixture and bring to a simmer until sauce has thickened. Garnish with sesame seeds or green onion, if desired. Serve over rice, if desired.
