Chicken breast with spinach salad and cherry tomatoes healthy dinner recipes

If you do not know what to cook with chicken, I offer you a recipe for healthy chicken breast with spinach and cherry tomatoes. In just 30 minutes, you get a delicious and healthy gluten-free lunch, rich in vitamins and protein.

Ingredients:
– chicken fillet 3pcs;
– baby spinach
– salt, pepper to taste;
– paprika 2 tbsp;
– garlic 3 cloves;
– cherry tomatoes 100g;
– chili pepper 1 pc;
– juice of ½ lemon;
– olive oil 3 tbsp;
– tomato juice 100g, or tomato paste (50%/50% mix with water)
– a sprig of thyme
For sauce:
– wild rocket;
– garlic 1 clove;
– a pinch of salt;
– vegetable oil 1 tbsp;
– parmesan 20g.

Marinate the chicken fillet – salt, pepper, paprika, a little thyme. Add olive oil, tomato juice (or pasta mix with water), garlic. Mix it all well and marinate for 20 minutes. Then put into a baking dish. Bake the fillet in the oven for 30-35 minutes at a temperature of 180 degrees.

We make a salad: add cherry tomatoes (cut into halves), chili peppers to the spinach. Squeeze the juice of half a lemon. Add salt to taste and a couple of pinches of parmesan. Mix well.

To prepare the sauce, put wild rocket in a blender, add garlic, a pinch of salt, a couple of pinches of parmesan, and vegetable oil. Beat until smooth. This is an all purpose sauce. It goes well with different types of meat, pasta and baked potatoes.

Put the salad on a plate, chopped meat and sauce on top. Sprinkle with parmesan.
