It’s 6:30 AM and you need to head out the door ASAP to arrive at work on time. You quickly brush your teeth and get dressed. Then, you head to the kitchen to eat breakfast. You don’t have enough time to cook a nutritious, fulfilling breakfast such as scrambled eggs or oatmeal. So you grab a sugary granola bar or piece of fruit that could leave you hungry in 1-2 hours. Does that sound like you?
Don’t worry! I have a breakfast recipe that is not only easy to make, but is also low calorie (under 50 calories) and high protein, which is perfect for fat loss. THESE ARE EGG WHITE BITES. I recommend finding one day in the week to meal prep these egg white bites. They only contain veggies and liquid egg whites. Plus, you can easily meal prep them by preparing 2-3 of them for each day!
Here is the recipe
Ingredients
-1 pint of liquid egg whites
-100 g of Trader Joe’s garden vegetable hash
(You can use 2 cups of spinach and 1 Roma tomato or 1 bell pepper if you’d like)
Directions
1. Preheat oven to 350 F
2. Place cupcake holders in muffin tin
3. Add veggies to the egg white cups
4. Pour in egg whites into each cup
5. Season with salt and pepper
6. Bake for 17-20 minutes
7. Enjoy:)!
