INGREDIENTS (Serves 4) – 411 Calories per portion
Olive Oil Spray
1 Small onion chopped finely
3 Boneless and Skinless Chicken Breasts
3 cloves of Garlic
150ml Chicken Stock
1 Large handfuls of Baby Spinach or use Frozen and defrost as I have done
500g Gnocchi (I used gluten free)
100g Soft Cheese (I used a Vegan dairy free alternative)
2 Sliced of bread made into crumbs (I used gluten free bread)
80g Light Mozzarella or cheese of your choice (I used a dairy free alternative)
Salt & Pepper
