Here is the recipe for making banana oatmeal muffins:
Ingredients:
1 cup oats flour (you can grind old-fashioned rolled oats to make it)
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt (or per taste)
3 ripe bananas, mashed
2 tbsp vegetable oil
3 eggs (at room temperature)
2 tsp orange zest
1/2 tsp cinnamon powder
1/2 tsp nutmeg powder
2 tbsp (or more if you like) unsweetened chocolate chips
1 tsp vanilla extract
2 tbsp raisins
2 tbsp roasted walnuts or almonds
Directions:
1. Preheat the oven to 180 C degrees.
2. In a large mixing bowl, combine the oats flour, baking powder, baking soda, cinnamon powder, nutmeg powder, and salt.
3. Beat eggs, add vanilla extract, orange zest & oil, and mix it with mashed bananas.
4. Add the wet ingredients to the dry ingredients and stir until just combined.
5. Add raisins and chocolate chips. (Mix 2 tbsp chocolate chips with 1 or 2 tbsp of oats flour, this helps the chocolate chips not to sink at the bottom).
6. Mix well and scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
7. Garnish with a few chocolate chips and walnuts/almonds
8. Bake for 19-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Bake for additional 5-10 mins if the toothpick is not clean.
Let the muffins cool in the pan for 5 minutes before removing them to a wire rack to cool completely. If you like, drizzle honey, agave syrup, or almond butter before serving.
