Learn how to cook this quick and delicious Healthy Warm Farro Salad recipe for a great source of fiber and antioxidants. Farro is an ancient whole grain, derived from wheat, with a variety of health benefits.
Ingredients:
• 1 tbsp. olive oil
• 2 garlic cloves
• 2 tsp. lemon juice
• Ground black pepper
• 2 cups low-sodium chicken broth
• 1 cup farro
• 2 cups chopped kale
• 1/2 cup crumbled feta cheese
Directions:
1. Mix olive oil, garlic, lemon juice, and pepper together in bowl.
2. Combine chicken broth and farro together in a large frying pan and bring to a boil.
3. Reduce heat to medium and simmer for about 20-25 minutes, until farro has absorbed the broth.
4. Stir olive oil mixture into farro until coated.
5. Add kale mixture and cook for 2-3 minutes, or until kale has wilted.
6. Sprinkle feta cheese over salad and stir until well blended.
