Seedai or Cheeda is a trdiational snack normally made during krishna Jayanti or Janmashtmi in South India.
These crunchy balls are made with a mix of rice flour and urad dal flour as the main ingredients.

So, here is a quick and easy savory version of Seedai recipe.
Little Millet Classic Uppu Seedai Recipe
Step 1 – Take 1 cup OGMO Little Millet Classic mix in a plate.
Step 2 – Add 1 tbsp melted butter or ghee or any oil and rub it with the mix.
Step 3 – Add very little water to mix the flour. You may need just about a few teaspoons of water to make crumbly dough just like cookie dough.
Step 4 – make small peanut sized balls as shown in the video. Do not make perfect rounds.
Step 5 – Deep fry the seedai in small batches.
Important tips
• OGMO Little Millet Classic is already roasted and you can skip the step of roasting the rice flour in this recipe.
• Do not add too much water, the dough should be semi-solid or almost like cookie dough.
• Do not roll the seedai into perfect round without any air gap, as when you fry them in oil there are chances of the seedai to burst.
• Make the seedai in small size so that they cook evenly and become crisp from inside as well.
• Fry the seedai in slow flame and let them cook till they become crisp and change the color lightly.
• Add 1 few teaspoons of grated coconut and a pinch of asafoetida if you wish for a better taste.
• As there is fenugreek powder in OGMOmix, you might feel the slight bitter taste. But then, that is a good way to include the beneficial fenugreek in your diet.
LITTLE MILLET
Little millet are the smallest minor millets and is known as Kutki in Hindi and Samai in Tamil.
It boosts immunity and has exceptional nutritional values.
Little millets are also rich in protein, fats, antioxidants, complex carbs, vitamins and minerals. This makes them complete food.
These are non-acidic, non-allergic, and gluten free, which makes them soothing and easy to digest.
IMPORTANT Pointers
Fibre and complex carb in Minor millet are weaved together and starts from the centre to the outer layer in concentric circles. If the grains are not pre-soaked before cooking, these fibre may cause bloating, indigestion and constipation.
Two most important pointers to remember while including these healthy Minor millet in your diet are;
1. Always opt for unpolished minor millets, as polished millet are devoid of many nutrients.
2. Pre-soaking the grains for 6-8 hours to loosen up the fibre layers.
