1 1/2 Cups All-Purpose Flour
3/4 Cup Granulated Sugar
1 Teaspoon Baking Powder
1/2 Teaspoon Kosher Salt
2 Large Eggs
3/4 Cup Buttermilk
1/2 Cup Apple Sauce
1/2 Teaspoon Vanilla Extract
1 Cup Blueberries
▶ Instructions
Preheat over to 350 degrees and lightly grease an 8×4 loaf pan.
Whisk flour, sugar, baking powder, and salt in a bowl.
Whisk eggs in another bowl and then add buttermilk, apple sauce, and vanilla extract.
Pour the wet ingredients into the bowl with the dry ingredients and mix until combined.
Then, fold in the blueberries and pour into the loaf pan.
Loosely cover the loaf pan with foil and bake at 350 degrees for 60 minutes.
Bake uncovered for an additional 10 to 15 minutes or until a toothpick comes out clean.
Let the blueberry bread cool for 15 minutes and then transfer it to a cooling rack until completely cooled.
