Making homemade light caesar salad dressing is easy and quick. No mayo added – low calorie recipe. Anchovies are of course optional but I highly recommend to use it, it adds very nice flavor. I add a whole egg but if you like the dressing to be thicker use just an egg yolk.
Ingredients
– 4 tbs olive oil
– 1 egg
– 1 oz dijon mustard
– 2 garlic cloves
– juice from one lemon
– 1/2 oz anchovies
– 1/2 oz grated parmesan cheese
– salt and pepper to taste
