This is such an easy garbanzo beans recipe, filled with all the healthy benefits of spinach and tomatoes! Whether you call them chickpeas or garbanzo beans, they are one of the nutrient powerhouses of the Mediterranean diet!
► INGREDIENTS
1 yellow onion diced
2-3 cloves garlic
1 Tbsp grated ginger
1 Tbsp extra virgin olive oil
2 tsps ground cumin
2 tsps mild paprika
2 tsps sumac
2 tsps chili flakes
2 cans (15oz each) diced tomatoes
1 jar/can of garbanzo beans (28oz), drained, rinsed and slip-skinned
1 lime, juiced
4-5 cups baby spinach
¼ cup fresh chopped herbs (parsley, mint, basil)
sea salt and freshly ground pepper to taste
Yogurt, just a dollop for garnish
