Ingredients:

500 grams carrots, peeled and cut into small pieces
2 tablespoons ghee or oil
1/2 teaspoon cumin seeds
1/4 teaspoon asafoetida (hing)
2-3 green cardamom pods
1 cinnamon stick
3-4 cloves
1/4 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon coriander powder
2 tablespoons jaggery or brown sugar
Salt, to taste
Chopped coriander leaves, for garnish
Instructions:

Heat ghee or oil in a pan over medium heat.
Add cumin seeds, asafoetida, green cardamom pods, cinnamon stick, and cloves. Fry for a few seconds until fragrant.
Add the carrots to the pan and mix well.
Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
Cover the pan with a lid and let the carrots cook for 5-7 minutes until they become tender.
Remove the lid and add jaggery or brown sugar to the pan. Mix well and cook for another 2-3 minutes until the sugar melts and blends with the carrots.
Garnish with chopped coriander leaves and serve hot with roti or rice.
