If you’re looking for an easy and tasty lunch that will help you lose weight or just help you eat healthier, look no further! If you’re in the mood for a quick and easy lunch, this recipe is perfect for you!

Ingredients
– 200g white fish (I used pollack), defrosted if you’re using frozen fish
– 1 big bell pepper (220-240g)
– 200-250g zucchini
– 70g red onion
-2 garlic cloves
– 20g hot sauce (I used Peruvian Aji Panca and aji amarillo)
– 1/2 teaspoon cumin, 1/4 teaspoon oregano, 1/2 cube vegetable stock, 2 tbsp (red wine) vinegar
– 50-100ml water

Recipe
1.cut all the veggies – have everything ready to go!
2. spray a pan with an oil spray (I used PAM Spray:
3.Place the white fish in the pan and turn after 1 minute. Add salt and pepper to the fish
4. Add the garlic, onion and rest of the vegetables.
5. Add vinegar, cumin, vegetable stock cube and water
6. Cover the pan and let cook for 5 minutes
7. uncover the pan and add the oregano. Cut the fish in 4 with a spoon.
8. mix everything in the pan.
9. serve. Tip: add cilantro or parley!

Nutritional Value: 325 kcal | 42g protein | 30g carbohydrates | 2g fats | 3,5g fiber

My dessert:
40g oats with 3g cacao and 180ml water (heat in microwave for 1-2 minutes or make in a sauce pan
topping: 1/2 orange

Nutritional Value: 205 kcal | 7g protein | 34g carbohydrates | 3,5g fats | 7g fiber
