Chocolate Peanut Butter Protein Balls:
Ingredients:
1 cup rolled oats
1/2 cup natural peanut butter
1/3 cup honey or maple syrup
1/4 cup unsweetened cocoa powder
1/4 cup chocolate chips
1/4 cup chia seeds
1 scoop chocolate protein powder
1 tsp vanilla extract
Pinch of salt
Instructions:
1. In a large mixing bowl, stir together the rolled oats, peanut butter, honey or maple syrup, cocoa powder, chocolate chips, chia seeds, protein powder, vanilla extract, and salt until well combined.
2. Use a cookie scoop or spoon to portion the mixture into small balls, about 1-2 tablespoons each.
3. Place the balls on a baking sheet lined with parchment paper, and chill in the fridge for at least 30 minutes, or until firm.
4. Store the chocolate peanut butter protein balls in an airtight container in the fridge for up to a week.
Optional: You can also roll the protein balls in shredded coconut, chopped nuts, or cocoa powder for extra texture and flavor.
