Here’s a recipe for Baked Egg Avocado Boats:
2 ripe avocados
4 eggs
Salt and pepper
Optional toppings: chopped fresh herbs, diced tomatoes, crumbled bacon, shredded cheese
Preheat oven to 425 degrees F.

Slice the avocados in half and remove the pit. Scoop out a little bit of the avocado flesh to make room for the egg.

Crack an egg into each avocado half. Season with salt and pepper.

Bake for 15-20 minutes or until the egg whites are set and the yolks are cooked to your liking.

Top with your favorite toppings and enjoy!
