Shrimp kannappam || Stuffed Prawns Idli || Iftar Special Malabar Recipe – RKC

Kannappam is one of the easy and delicious dish from malabar. This can be served as a snack or breakfast. As the name indicates I am using shrimp fillings. You can even use chicken or beef fillings. Kannappam is a steamed healthy snack. This is a must try for Iftar.

Ingredients
For Batter
* 2 cups basmati/jeerakashala rice
* 1 1/2 cups coconut milk
* 2 eggs
* Salt to taste

For Filling
* Coconut Oil 2 tbsp
* Shrimp 1 pound
* Onions 1, chopped
* Ginger garlic paste 1 tbsp
* Green chillies 2, chopped
* Curry leaves few, chopped
* Tomato 1, chopped
* Kashmiri chilly powder 1 tsp
* Coriander powder 1/2 tsp
* Turmeric powder 1/2 tsp
* Garam masala 1/2 tsp
* Fennel seed powder 1/2 tsp
* Pepper powder 1/2 tsp
* Coriander leaves 2 tbsp
* Salt to taste
* Coconut Milk 2 tbsp

Preparation
* Wash and soak the rice with water for 4-5 hours.
* Grind rice with coconut milk first then add egg and salt give it a blend. Let it sit for 1 hour.
* In a food processor add shrimp, onion, green chilies, curry leaves, tomato, ginger garlic paste and give it a blend.
* Heat a frying pan add shrimp mix and cook. Once all the fresh smell leaves you can add all the spice powder.
* Add turmeric powder, kashmiri chilly powder, garam masala, coriander powder, pepper powder, fennel seed powder and salt. Saute for one minute.
* Add coriander leaves. Add 2 tbsp coconut milk and mix everything together. Turn off the heat.
* For kannappam we need idli mould. First grease the mould with little oil.
* Fill 3/4 of the mould with batter, add 1 tbsp of prawn masala over it. Similar way fill all the moulds.
* Steam it for 15-20 minutes. Allow it to cool and unmold them. Serve hot .

Recipe Notes
You can make this with chicken as well. Cook the chicken and shred them and make the same masala and follow the recipe.
